Chicken Satay Salad Sammies
 
1 lb. boneless chicken breast tenders
2 T. veggie oil
Grill seasoning or salt and pepper
3 rounded T. chunky peanut butter
3 T. tamari (dark or light soy sauce will do)
1/4 C. apple juice
2 tsp. hot sauce
2 tsp. lime or lemon juice
1/4 seedless cucumber, cut into thin sticks
1 C. shredded carrots
2 C. shredded lettuce
Pitas, halved and split

Heat a grill pan or large nonstick skillet over medium-high to high heat.  Coat chicken in oil and grill seasoning and cook 3 minutes on each side.  Pile up meat and shred it with a sharp knife
Place peanut butter in a bowl and microwave on high for 20 seconds. Whisk soy sauce, apple juice, hot sauce and lime juice into peanut butter. Toss chicken with satay sauce. Combine shredded veggies. Build sammies into pitas with veggies and satay chicken mix.

Chocalate Covered Balls
(Lo-Carb)
 
2 packages cream cheese
1 cup splenda
1/2 cup chopped nuts(pecans are best)
sugar free chocolate(Hershey's and Russel Stover are best)
1/4 bar of butter


Mix all ingredients except chocolate together and freeze untill it can be rolled into balls. Roll into balls. Small ones. Then melt chocolate and butter and drizzle on top. Freeze again about 15 minutes and serve. Nothin's good if it ain't easy!
